This is a really delicious quiche, and you can adapt it to use up other vegetables. I’ve made it with zucchini, but I don’t see why you shouldn’t be able to throw in broccoli or mushrooms instead.
3 onions, diced (or 2 onions, and 1 medium zucchini sliced thin)
2 tbsp flour
½ cup pareve milk
1 tsp salt
½ tsp pepper
pie shell (optional)
Preheat oven to 350. Sauté onions in oil until translucent.
Mix all other ingredients in a separate bowl, then add in onions.
Pour into pie shell, or just a lined foil pan if you are calorie conscious, and bake for about an hour.
