Zucchini Muffins

These are really very good, and don’t taste like zucchini at all. My father thought the green dots were some sort of spice. The original recipe called for a cup of oil. I’d suggest replacing at least some of that with water/applesauce.

Zucchini Muffins

2 cups flour0911161920
1 1/2 cups sugar
3/4 cup oil
1/4 cup water
3 eggs
2 cups grated zucchini
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3 tbsp cinnamon
3 tbsp vanilla

Preheat oven to 350. Mix dry ingredients together. Combine water, eggs, and oil and mix well. Add zucchini and vanilla, and mix again. Combine wet and dry ingredients, and pour into muffin tins and bake for about an hour.
