Supper in 15 Minutes

I got home really late one night, after running several errands, and I was tired and hungry. I decided to make microwave chicken and couscous – which takes about 15 minutes, total.

Please keep in mind: everyone’s microwave works a little differently. Yours make take longer/shorter – so keep an eye on your food and adjust accordingly.

Start by sprinkling a microwaveable plate with some flour. Cut up enough chicken for two people. The pieces should be thin so they will cook quickly. Layer the chicken over the flour, and sprinkle flour on top. This doesn’t need to be precise, you will mix it later. Just make sure the chicken is all touching the plate.


Put the chicken in the microwave for two and a half minutes. In the meantime, take out a 10 oz box of plain couscous. Measure 2 cups of water, some salt, and a dash of water into the pot and turn on the flame.

While the water heats up, the microwave should beep. Turn the chicken so the flour is spread around a little better.


The chicken should be about halfway cooked. Return it to the microwave for another two and a half minutes. Take out duck sauce and teriyaki sauce and pour some of each into a bowl. I prefer a little more duck than teriyaki.


Mix the sauces. By now, your water should be boiling, so add the couscous, shut the flame, and cover the pot.

When the microwave beeps again, take out the chicken and make sure it looks cooked. If you still see big pink spots, put it in again for 30 seconds at a time until it seems mostly cooked. You will still be cooking it more, so don’t over do it now.

Using a spoon, spread the mixture of sauce over the chicken.


When you are done, put it back in for 60 seconds. Turn the pieces with your spoon, and put it back for another 60 seconds. At this point, cut open the fattest piece and make sure there are no pink spots. If it completely white, your chicken is done. If not, return to the microwave for 30 seconds at a time until you are sure it is done.


Your couscous should be done – it needs to sit for 5 minutes after you shut the flame. Divide the chicken and sauce between two plate, dish out the couscous, and enjoy!
